Cupcakes for Earth Day and Easter!

Did someone say cupcakes?!? Yes, please! Surprise your class with an Easter and/or Earth Day treat with these super simple and super delicious looking cupcakes that were featured on Rockabye Butterfly.

Making the Cupcakes

Whip up a batch of vanilla or white cupcake batter and divide it in half into 2 bowls. Dye the batter in one bowl blue with a few drops of food coloring and the half should be green.

Take a spoonfull of each color of batter and drizzle them simultaneously into your muffin tins until they are about 3/4 full. Be sure you've put cupcake liners into your pans first (maybe bunnies for the Easter version, or pretty flowers for the Earth Day version). Once the tins are full, use a tooth pick to swirl the colors together on top.

Bake according to your recipe or package instructions. The finised result should resemble the Earth!

Complete the cupcakes by dollopping on white frosting - perfect for a cloud hovering above the Earth. You could also add Easter or Spring embellishments to the top of your cupcakes depending on which holiday you are celebrating. Yum!
